Part of a 60,000 s.f. remodel of the College Plaza Shopping Center located on the north side of DeLand; the DeLand Natural Market & Bakery has expanded from 13,610 s.f. into two distinct businesses. The Natural Market has grown to 23,513 s.f. and the DeLand Bakery now occupies 18,645 s.f. for its own operations. The new natural foods grocery store includes a full commercial deli and a specialty bakery as part of its operation in addition to a cosmetics treatment suite. There is over 1,100 lineal feet of multi-tiered unrefrigerated product display plus more than 240 lineal feet of frozen and cold food cases. The specialty bakery is designed to provide observation by the merchants and there is a 40 person community training room for cooking classes. The five oven commercial bakery is organized to optimize product flow through the facility. The design includes a receiving area for raw products, multiple commercial mixers and dividers, a walk in proofer, and a multiple packagers which lead to an out-flow shipping area. In addition, there are also equipment washing stations, an employee lounge and a shipping manager's office. The remodel and expansion was divided into five phases in order to keep the store open for business.
